He likes researching and implementing new cooking techniques, apart from working on new ways of presenting food. He envisions preparing and serving food with the freshest local ingredients and modern concepts. Chef Jiten specializes in crafting varied menus around Mediterranean, modern European and contemporary Indian cuisines.

The chef brings in a rich experience to the table of hands-on working for over 20 years. His assignments saw him as the Executive Chef heading two different models of F&B with “Olive Bistro” and “The Moving Kitchen by Olive” which was a high-end catering division of the Olive group. Corporate Chef at Amour café in Hauz Khas Village and Amour Bistro, Malcha Marg, where he won critical acclaim from Vir Sanghvi for Bistro-style food. He has previously been associated with brands like Old World Hospitality in Delhi, 5 Senses in Chennai, in Delhi among many others.

A conceptual thinker, the chef believes in working as a team and uses the ‘Peripheral Leadership’ model in all of his kitchen projects. His attendance of wine evenings and appreciation sessions has honed his food and wine pairing skills. He also takes keen interest in bar mixology because of his in depth knowledge of Ingredients and their properties.



A Our Young dynamic Chef partner carries a 5 years of rich and productive experience along with him. Born and brought up in Goa and earned his Bachelors Degree in Hotel Management from “Heritage Institute of Hotel and Tourism, goa.

Started his career from “Park Hyatt, Goa” and then Worked with the brands like “Renaissance Mumbai” and completed his Management Training programme from “Rio Resort Goa”.

His last assignment saw him working as Chef in brigade at best European Cuisine restaurants “Olive – Bar and Kitchen, Qutab”and then selected for of it’s a kind of Modern Indian Bar, “Ek Bar by Olive at Defence Colony, New Delhi”.

Chef john fernandes is a key Member in our brigade and has got his exposure in all the departments like Bakery, European Kitchen and modern Indian Kitchen.
